Quick Pickled Onions

These quick pickled onions are easy to make and delicious to pair with so many meals! I always keep a jar of these on hand.

Recipe

Ingredients

  • 1 medium red onion

  • 1/4 cup apple cider vinegar

  • 1/4 cup white vinegar

  • 1/2 cup water

  • 1 tsp salt

  • 2 tbsp sugar (you can substitute maple syrup or honey)

  • pinch of red pepper flakes (optional)

Steps

  1. Slice onion thinly with a mandolin or knife. Place slices in a jar.

  2. Stir together all other ingredients, and microwave for 1 minute, until sweetener dissolves and liquid it hot.

  3. Pour the liquid into the jar. Let sit for at least 1 hour, or overnight.

  4. Store in the fridge, and enjoy!
