Cauliflower and Lentil Curry
Recipe
Ingredients
1 onion, diced
3 cloves garlic, minced
2 tbsp olive oil
1 large can diced tomatoes
1 can coconut milk
2-4 tbsp red Thai curry paste
1/2 head cauliflower, chopped
1/2 cup red lentils
1 cup cubed butternut squash, fresh or frozen (you could substitute potatoes)
1 hot pepper, diced (without seeds for less spice)
salt and pepper, to taste
pinch of cayenne, to taste
2 cups spinach
1/2 lime, juiced
Steps
Sauté the onion in olive oil until translucent, add garlic in the last minute.
Combine the remaining ingredients (except the spinach and lime juice) in a large pot. Simmer on medium low for 30 minutes.
When the cauliflower is tender, add the spinach and lime and stir together.
Serve with jasmine rice.
