Cauliflower and lentil red curry for dinner tonight! It’s an easy and delicious vegetarian meal

Cauliflower and Lentil Curry

Recipe

Ingredients

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 large can diced tomatoes

  • 1 can coconut milk

  • 2-4 tbsp red Thai curry paste

  • 1/2 head cauliflower, chopped

  • 1/2 cup red lentils

  • 1 cup cubed butternut squash, fresh or frozen (you could substitute potatoes)

  • 1 hot pepper, diced (without seeds for less spice)

  • salt and pepper, to taste

  • pinch of cayenne, to taste

  • 2 cups spinach

  • 1/2 lime, juiced

Steps

  1. Sauté the onion in olive oil until translucent, add garlic in the last minute.

  2. Combine the remaining ingredients (except the spinach and lime juice) in a large pot. Simmer on medium low for 30 minutes.

  3. When the cauliflower is tender, add the spinach and lime and stir together.

  4. Serve with jasmine rice.
