Butternut Squash Frittata

This Butternut squash and goat cheese frittata is as delicious as it is easy to make. I cook it up in a cast iron skillet on Sundays and then eat it for breakfast all week long.

Recipe

Ingredients

  • 6 eggs

  • 3/4 cup egg whites

  • 3 strips bacon, chopped

  • 1/2 onion, diced

  • 2 cloves garlic, minced

  • 1/2 bell pepper, diced

  • 2 cups frozen butternut squash, cubed

  • 2 cups spinach

  • 100g goat cheese

Steps

  1. In a cast iron skillet, cook the bacon until slightly crispy. Then add onions and cook until translucent.

  2. Add the pepper and garlic, and cook for a few minutes.

  3. Add the butternut squash and allow to cook until soft, then stir in spinach.

  4. In a bowl, beat together the eggs and egg whites, season with salt and pepper to taste. Then pour into the skillet.

  5. Add goat cheese evenly to the top of the skillet.

  6. Bake at 375 for 15-20 minutes. Then slice and enjoy!
