Salmon and Veggies
An easy weeknight dinner of roasted salmon and veggies with cauliflower rice. This whole meal takes less than 30 minutes to make (and it’s SO good).

Ingredients
Salmon and Vegetables
1 large filet of salmon
2 zucchini’s, sliced into rounds
1 bell pepper, chopped
1 lemon, sliced
1 tbsp olive oil
1 tsp salt + 1 tsp pepper
1 tsp garlic powder
1 tbsp Italian seasoning
1 tsp paprika
2 tbsp chili garlic sauce
Cauliflower Rice
4 cups cauliflower, diced
2 cloves garlic, minced
zest of 1 lime
juice of 1/2 lime
2 tbsp hot sauce (I used jalapeño hot sauce)
1 tbsp olive oil
2 tbsp parsley, chopped (or cilantro, if desired)
Steps
Coat the zucchini and pepper with olive oil, salt, pepper, Italian seasoning, paprika, garlic powder, and chilli garlic sauce. Place onto a baking sheet.
Pat the salmon dry, place on top of the veggies on the baking sheet and coat with the same seasonings.
Place thin slices of lemon on top of the salmon.Bake at 350 degrees for 15-20 minutes (depending on the thickness of the salmon). For smaller prices of salmon, bake for 7-10 minutes.
While the salmon is in the oven, heat the olive oil in a large skillet and add all the cauliflower rice ingredients. Cook on medium heat, stirring frequently for 7-10 minutes, until the cauliflower is tender, but not mushy. Then, stir in parsley or cilantro if desired.
Let salmon sit at room temperature for 10 minutes.
Serve salmon, veggies and cauliflower rice together with steamed broccoli
