Ingredients
1lb lean ground turkey
1 yellow onion, diced
2 cloves garlic, minced
2 tbsp low sodium taco seasoning
1 can of green chilis (~1/4 cup)
3/4 cup chunky salsa (or canned tomatoes)
3 cups of baby spinach or baby kale
3/4 cup of shredded cheese (I used Daiya)
1/2 lime
2 stalks of green onions, chopped
Steps
In a large skillet, brown the ground turkey with a tbsp of olive oil on medium heat. Season with pepper and salt.
Drain the excess fat from the pan, and add in onions and green chilis. Cook until onions are tender (~5 minutes). Then add garlic and taco seasoning.
Add the salsa to the pan, and the baby greens. Cover until the greens wilt, and then stir.
Top with the juice from half a lime, and cheese. Cover until the cheese melts.
Garnish with green onions.
