Chia Seed Jam
This Chia seed jam is a great alternative to store bought jams, and it is SO EASY. Seriously, it takes barely any effort, and the result is so worth it. It has become my new favourite topping for waffles and pancakes.
Chia Seed Jam

Ingredients
1/2 cup frozen mango
1/2 cup frozen raspberries
1/2 tsp lemon zest
1/2 tsp cinnamon
1-2 tbsp sugar free syrup (or maple syrup)
1/2 tbsp ground chia seeds
Steps
Combine all ingredients except chia seeds in a small pot on medium heat. Let simmer until the fruit breaks down and becomes a jam like texture, stir often (~8-10 minutes).
Allow the mixture to cool, and stir in 1/2 tbsp ground chia seeds.
Store in an air tight container in the fridge.
