Lemon Poppy Seed Protein Cookies
Lemon Poppy seed protein cookies. They are just sweet enough thanks to the yogurt glaze, and have tons of protein to keep you full. They are also vegan, and require minimal ingredients.
Lemon Poppy Seed Protein Cookies

Ingredients
2 scoops protein powder
1/2 cup oats
1/3 cup coconut flour
1/2 tbsp stevia
1 tbsp poppy seeds
Juice and zest from 1 lemon
Glaze:
2tbsp coconut yogurt
1 tbsp icing sugar
Steps
Combine all cookie ingredients in a bowl, and mix until it forms a wet dough.
Roll the dough into small balls (~1.5 tbsp of dough).
Place the balls onto a baking sheet, and press flat.
Take for 10 minutes at 350 degrees F.
To make the glaze, whisk the sugar into the yogurt until fully dissolved.
Then the cookies have cooled, dip the tops into the glaze.
