Coconut Chia Seed Pudding
I went to Freshii the other day and sampled their Coconut Chia Pudding, and I knew I had to try making it at home. This recipe is SO TASTY I would eat it for dessert or breakfast. If you have been hesitant to try chia seed pudding because of the texture, I recommend trying ground chia seeds like I used. (And yes, I did have a photo shoot on the balcony with my pudding ).
Coconut Chia Seed Pudding
Recipe
Ingredients
1/2 cup coconut milk
1/4 cup shredded coconut
1 tbsp sweetener (either maple syrup or stevia)
splash of vanilla
pinch salt
1 tbsp chia seeds, ground
Toppings: mango, raspberries, desiccated coconut
Steps
Whisk together all the ingredients and chill in the fridge. If you are using ground chia seeds, chill for ~10 min, if using whole seeds chill for at least 4 hours (or overnight)
Top with fruit and coconut.
