Chickpea Pesto Pasta
This vegan pesto pasta is delicious, and uses chickpea pasta for extra protein! It is super quick and easy to throw together, and will keep you full all day.
Chickpea Pesto Pasta

Ingredients
1 box of chickpea pasta
1/3 cup vegan pesto
1 avocado, mashed
1/4 red onion, diced
2 cloves garlic, minced
2 cups cherry tomatoes, halved
1/2 bell pepper, diced
1 tsp each of salt, pepper, red chilli flakes
Steps
Cook the chickpea pasta according to directions, until it’s al dente (still a bit firm).
Mash the avocado and mix it into the pesto.
Sauté the onions and garlic in olive oil in a large skillet.
Add the pasta, avocado, pesto, tomatoes and peppers to the skillet and cook together until the veggies are soft.
Season with salt, pepper, and chilli flakes
