Salmon Fried Quinoa
It’s like fried rice but better! Salmon fried quinoa is super tasty and you can load it up with as many veggies as you want. You can really just throw in any veggies you have left over in your fridge.
Salmon Fried Quinoa

Ingredients
3 cups leftover quinoa
1 fillet of salmon
1 bell pepper, diced
1 can of peas and carrots (can also use fresh or frozen)
200 g brown mushrooms, sliced
1/2 yellow onion, diced
3 cloves garlic, minced
1 tbsp chili garlic sauce
3 tbsp soy sauce
1 tsp fish sauce
1 tbsp sesame oil
1/2 tsp ground ginger
1/3 cup chopped scallions
Steps
In a large skillet, fry the salmon fillet with olive oil for ~5 minutes of each side, depending on the size of the fillet. Pat dry and season with salt and pepper before cooking. When cooked, remove from pan and shred with two forks.
Add onion and mushrooms to the pan, and fry on high heat until tender, ~6 minutes.
Add bell pepper, peas, carrots and garlic to the pan and sauté for 5 minutes. Season with salt, pepper and ginger (fresh or ground).
Add the quinoa, soy sauce, fish sauce, chilli garlic sauce and sesame oil to the skillet, and cook until heated through (~10 min).
Add the salmon back to the pan and mix. Top with chopped scallions.
