White Chicken Chili
White chicken chilli is one of my favourite slow cooker meals. It is so easy to prep, using ingredients from the pantry, and throw into the slow cooker. I topped it with shredded cheese and plain yogurt. I also made some tasty sugar-free cornbread muffins to go with it!
White Chicken Chili

Ingredients
4 chicken breasts or thighs
1 onion, diced
4 cloves garlic, minced
1 bell pepper, minced
1 can green chillies
1 jalapeño, diced
1 jar of salsa verde or Mexican green sauce
1 can corn
1 can white beans
3 sticks of celery, diced
Juice of 1 lime
450ml of chicken stock
Spices:
1 tbsp Italian spices
1/2 tbsp cumin
1 tbsp chili powder
salt and pepper, to taste
Steps
Put all ingredients except beans into slow cooker.
In the last 30 minutes, remove chicken and shred with a fork. Add the chicken and beans into the slow cooker, and cook for 30 more minutes.
Top with cheese, green onions, and yogurt or sour cream.
To make the cornbread muffins:
Mix together 1/3 cup light margarine, 1 cup milk, and 1 egg.
Add 1/2 cup sugar free Maple syrup.
Stir together 1.5 cups cornmeal with 1 cup of whole wheat flour, 1 tsp salt, and 1 tsp baking powder.
Combine wet and dry ingredients
Divide into muffin tin and bake at 400 F for 15-20 minutes .
