Chicken with Mushroom Sauce

Chicken with mushroom sauce is one of my favourite dinners to make on the weekend! The sauce for this is delicious. It’s a tasty meal that is easy to make, but still looks impressive.

Chicken with Mushroom Sauce

Recipe

Ingredients

  • 8 chicken thighs (I used bone in)

  • 250 g of cremini mushrooms (or 50/50 with white mushrooms)

  • 1/2 yellow onion, diced

  • 2 cloves garlic

  • 1/2 cup chicken broth

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 tbsp parsley, chopped

  • Spices

    • salt

    • pepper

    • Italian spice mix

    • Rosemary

    • basil

Steps

  1. Combine spices in a small bowl.

  2. Pat the chicken dry, and season both sides with half of the spice mix.

  3. Sear the chicken for 3 minutes on each side in a skillet with a tbsp of olive oil.

  4. Transfer the chicken to a baking dish, and cook for 20-30 minutes at 350 degrees F. Adjust the cooking time for boneless chicken thighs.

  5. In a large pan, add butter, onion, and mushrooms, and cook until tender (~5 minutes).

  6. Add 2 cloves garlic, and the other half of the spice mix and sauté for another minute.

  7. Add chicken stock to the pan and stir.

  8. Remove chicken from oven and top with mushroom sauce and parsley.
