Cheesy Zucchini Bake
This zucchini bake is super easy to make, and SOOOO CHEESY. It tastes similar to a lasagna, but a made a bit lighter with zucchini instead of pasta.

Ingredients
2/3 medium zucchinis, sliced into rounds
1 pound ground chicken
1 tsp olive oil
1/2 onion, diced
1 can tomato basil sauce
red pepper flakes, salt and pepper
2 cloves minced garlic
1 cup slaw mix (I used kale slaw)
1 cup ricotta cheese
2 cups shredded mozzarella
2 tbsp chopped basil
1/2 cup parmesan cheese
Steps
In a large pan, fry the olive oil and onion until the onion is soft (~5 min), then stir in the garlic.
Add the ground chicken to the pan, and fry until browned (~8 min)
Add the pasta sauce, red pepper flakes, kale slaw, salt and pepper to the pan, and simmer together for 5-7 minutes.
In a glass baking dish, layer the zucchini rounds, top with two large scoops of the chicken and sauce, and dollop half of the ricotta on top, and half the mozzarella.
Repeat with another layer of zucchini, sauce and ricotta. Top with mozzarella and parmesan cheese.
Bake in the oven at 375 degrees F for 30 minutes (until the top is golden).
Top with fresh basil
