This almond flour banana bread recipe actually belongs to my mom. It’s quickly become a staple food item in our family. With no added sugar, butter or flour it’s a tasty, and healthy way to enjoy banana bread. These would be delicious as muffins.

Ingredients

  • 3 eggs

  • 3 large, very ripe bananas

  • 1 tsp vanilla extract

  • 1 tbsp cinnamon

  • 1 packet Splenda (optional)

  • 2 cups almond flour

  • 1/4 tsp salt

  • 1 tsp baking soda

Steps

  1. Finely mash the bananas, and whisk in the eggs, vanilla, cinnamon and Splenda.

  2. Fold in the almond flour, salt and baking soda.

  3. Pour batter into a greased loaf pan (line the bottom with parchment for minimum stickage), and bake at 350 degrees F for 45 minutes.

  4. Let cool for 15 in the pan, before transferring to a cooking rack.
