Almond Flour Banana Bread
This almond flour banana bread recipe actually belongs to my mom. It’s quickly become a staple food item in our family. With no added sugar, butter or flour it’s a tasty, and healthy way to enjoy banana bread. These would be delicious as muffins.

Ingredients
3 eggs
3 large, very ripe bananas
1 tsp vanilla extract
1 tbsp cinnamon
1 packet Splenda (optional)
2 cups almond flour
1/4 tsp salt
1 tsp baking soda
Steps
Finely mash the bananas, and whisk in the eggs, vanilla, cinnamon and Splenda.
Fold in the almond flour, salt and baking soda.
Pour batter into a greased loaf pan (line the bottom with parchment for minimum stickage), and bake at 350 degrees F for 45 minutes.
Let cool for 15 in the pan, before transferring to a cooking rack.
