One Pan Cashew Chicken
This cashew chicken is so easy to make, and you can make it all in ONE PAN! I swear you could make this faster than it takes to order take out—plus it tastes even better. This recipe is also a low carb friendly dinner option for when you are craving Chinese food.

Ingredients
2-3 chicken breasts, cubed
1 head of broccoli, in florets
2 bell peppers, chops into chunks
1/2 cup raw cashews
1 cup sliced mushrooms
green onions and sesame seeds (to garnish)
Sauce
1/2 tsp salt
1/2 tsp pepper
1/2 tsp red pepper flakes
1/2 tsp ginger (fresh or ground)
1/3 cup bone broth (or substitute chicken broth)
1/4 cup soy sauce
2 tsp sesame oil
2 cloves garlic, minced
1 tsp chilli garlic sauce
1 tbsp Trader Joe’s Mushroom Umami seasoning (or substitute 1 tbsp fish sauce)
1 tbsp cornstarch, to thicken the sauce
Steps
Whisk all sauce ingredients together.
Add 2 tablespoons of the sauce to the chopped chicken. Let marinate in the fridge for 10 minutes.
Fry the chicken in a large skillet, with a tsp of sesame oil for 8-10 minutes until cooked through. Remove from pan, and set aside..
Add the broccoli to the pan, and cook for 5 minutes. Then add the mushrooms, and peppers, and cook for 5-10 minutes until tender.
Add the remaining sauce, cashews, and cooked chicken to the pan. Simmer together for a few minutes, until the sauce thickens
Garnish with green onions and sesame seeds.
