One Pan Cashew Chicken

This cashew chicken is so easy to make, and you can make it all in ONE PAN! I swear you could make this faster than it takes to order take out—plus it tastes even better. This recipe is also a low carb friendly dinner option for when you are craving Chinese food.

Ingredients

  • 2-3 chicken breasts, cubed

  • 1 head of broccoli, in florets

  • 2 bell peppers, chops into chunks

  • 1/2 cup raw cashews

  • 1 cup sliced mushrooms

  • green onions and sesame seeds (to garnish)

Sauce

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp red pepper flakes

  • 1/2 tsp ginger (fresh or ground)

  • 1/3 cup bone broth (or substitute chicken broth)

  • 1/4 cup soy sauce

  • 2 tsp sesame oil

  • 2 cloves garlic, minced

  • 1 tsp chilli garlic sauce

  • 1 tbsp Trader Joe’s Mushroom Umami seasoning (or substitute 1 tbsp fish sauce)

  • 1 tbsp cornstarch, to thicken the sauce

Steps

  1. Whisk all sauce ingredients together.

  2. Add 2 tablespoons of the sauce to the chopped chicken. Let marinate in the fridge for 10 minutes.

  3. Fry the chicken in a large skillet, with a tsp of sesame oil for 8-10 minutes until cooked through. Remove from pan, and set aside..

  4. Add the broccoli to the pan, and cook for 5 minutes. Then add the mushrooms, and peppers, and cook for 5-10 minutes until tender.

  5. Add the remaining sauce, cashews, and cooked chicken to the pan. Simmer together for a few minutes, until the sauce thickens

  6. Garnish with green onions and sesame seeds.
