Egg Roll in a Bowl
This bowl tastes like the filling of an egg roll, and let’s be honest that is the best part. Even better, it can all prepared in ONE pan! I serve it with a spicy, greek yogurt dressing. This is a great low carb dinner that can be prepped ahead of time.

Ingredients
1 pound ground pork
1 bag coleslaw mix (I used “kale-slaw”)
1/2 red onion, diced
6 green onions (whites and greens)
4 cloves garlic
1 tbsp fresh grated ginger (or substitute for 1 tsp ground ginger)
1 tsp sesame oil
2 tbsp chili garlic sauce
Franks red hot sauce, to taste
2 tbsp low sodium soy sauce
1 tbsp rice wine vinegar
salt and pepper, to taste
Sesame seeds (to garnish)
Spicy dressing
3/4 cup plain Greek yogurt
1 tbsp chili garlic sauce
1 tsp hot sauce
1/4 tsp salt
Steps
On medium heat in a large skillet, fry the red onion, whites of the green onion (save the green parts for alter), and sesame oil together until the onion softens.
Add the garlic and ginger and sauté for 2 min.
Add the ground pork, chili garlic sauce, hot sauce, salt and pepper to the skillet. Break the pork up into small pieces as you stir. Continue to cook until the pork is browned and fully cooked (~8-10 min).
Add the coleslaw mix, rice wine vinegar, soy sauce to the pan. Stir together and cook until the cabbage has softened (~5 min)
To make the spicy dressing, whisk together Greek yogurt, chili garlic sauce, hot sauce and salt to taste.
Serve the egg roll bowl topped with the spicy dressing, sesame seeds, and the greens from the green onions .
