Healthy Lemon Loaf with Greek Yogurt
This healthy Lemon Loaf is delicious. It’s a perfect recipe for summer, and it’s even better than the Starbucks lemon loaf (which is one of my favourites).
Healthy Lemon Loaf

Ingredients
1.5 cups flour
2.5 tsp baking powder
1/2 tsp salt
1/4 cups butter
3/4 cups sweetener (I used swerve, but you could also just use sugar)
3 eggs
2 tsp neutral oil
1 tsp vanilla
2 tbsp lemon juice
zest of 2 lemons
1 cup plain Greek yogurt
Steps
Combine flour, baking powder, and salt in one bowl.
In another bowl, beat together butter and sweetener. Add eggs one at a time to the butter and sugar.
Beat in the oil, vanilla and lemon zest and juice.
Alternate adding the dry ingredients and the yogurt to the butter mixture
Pour batter into a loaf pan and bake at 350 degrees F for 50-60 minutes.
Optional: once cooled, top with a lemon glaze (powdered sugar+lemon juice) and extra zest
