Pineapple Mini Muffins
These pineapple mini muffins are delicious! I added coconut and pecans to give it a tropical vibe. I used cups of crushed pineapple from Costco, but you could easily blend up canned pineapple, or even substitute applesauce.

Ingredients
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups crushed pineapple (drained)
1/2 cup sugar free syrup
2 tbsp brown sugar
1 egg
3 tbsp milk
2 tsp vanilla extract
1/3 cup chopped pecans
1/2 cup desiccated coconut
Steps
Blend pineapple until puréed if the texture is not smooth enough.
Toast the pecans for ~5 minutes in the oven at 350 degrees F.
Whisk together the pineapple, syrup, sugar, egg, milk and vanilla.
Add the dry ingredient to the bowl, and stir until combined.
Fold in the pecans and coconut.
Scoop batter into a mini muffin tray, and bake at 350 degrees F for 15 minutes
