Recipe

Ingredients

  • 1 3/4 cup flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 2 tsp cinnamon

  • 1/2 tsp ground ginger and 1/4 tsp nutmeg

  • 2 cups grated carrots

  • 1/2 cup sugar free syrup

  • 1/3 cup oil

  • 2 eggs

  • 1 cup greek yogurt

  • 1 tsp vanilla

Steps

  1. Mix flour, baking powder, baking soda, spices in a bowl.

  2. Stir in the carrots, syrup, oil, eggs, yogurt, and vanilla.

  3. Divide evenly into muffins tin, and bake for 13-15 minutes at 425 degrees F.
