Maple Roasted Beets and Carrots

For an easy weeknight dinner, try a side of MAPLE roasted carrots and beets. These veggies were so good I was licking the plate. They would be a perfect side to bring to any potluck, or holiday dinner.

Recipe

Ingredients

  • 2 large carrots

  • 2-3 medium beets (or 5 small beets)

  • 1 tbsp olive oil

  • 1 tsp salt

  • 1 tsp pepper

  • 2 tbsp butter

  • 3 tbsp maple syrup

Steps

  1. Peel and chop up the carrots, and beets into bite sized pieces.

  2. Spread the veggies in an even layer on a baking sheet, and drizzle with olive oil, salt and pepper.

  3. Roast at 425 degrees F for 20-30 minutes, until the veggies are tender to pierce with a fork. The timing may vary depending on the size of the pieces.

  4. Remove the tray from the oven, and add 2 tbsp butter and 3 tbsp maple syrup to the pan. Toss to coat the veggies.

  5. Return to the oven for 5 more minutes.
