Maple Roasted Beets and Carrots
For an easy weeknight dinner, try a side of MAPLE roasted carrots and beets. These veggies were so good I was licking the plate. They would be a perfect side to bring to any potluck, or holiday dinner.
Maple Roasted Beets and Carrots

Ingredients
2 large carrots
2-3 medium beets (or 5 small beets)
1 tbsp olive oil
1 tsp salt
1 tsp pepper
2 tbsp butter
3 tbsp maple syrup
Steps
Peel and chop up the carrots, and beets into bite sized pieces.
Spread the veggies in an even layer on a baking sheet, and drizzle with olive oil, salt and pepper.
Roast at 425 degrees F for 20-30 minutes, until the veggies are tender to pierce with a fork. The timing may vary depending on the size of the pieces.
Remove the tray from the oven, and add 2 tbsp butter and 3 tbsp maple syrup to the pan. Toss to coat the veggies.
Return to the oven for 5 more minutes.
