Low Carb Chocolate Chip Coconut Cookies
Nothing beats a plate of freshly baked homemade cookies… especially when those cookies have no flour or added sugar. These coconut chocolate cookies taste like hybrid between a macaroon and a classic chocolate chip cookie, and I am obsessed.

Ingredients
1/4 cup butter
1/4 cup coconut oil
2 eggs
2 tbsp stevia
1 cup shredded coconut, unsweetened
3/4 cup chopped walnuts
2/3 cup almond flour
1 cup dark chocolate chunks (optional: sugar free)
pinch salt
1/2 tsp vanilla
Steps
Stir the softened butter and coconut oil together.
Stir in one egg at a time, then add the stevia, coconut, chocolate, salt and vanilla.
Lastly, slowly add the almond flour until the mixture thickens (it will still be quite a loose batter).
Drop a tablespoon of batter for each cookie onto a parchment lined baking sheet (or in a muffin tin to make them evenly circular).
Bake at 350 degrees F for 10-15 minutes.
