Pumpkin Almond Flour Mini Muffins

Buying a mini muffin pan may have been the greatest decision I’ve ever made. These mini pumpkin spice muffins are delicious, and they contain no butter, sugar, or flour. Plus these muffins are perfect for fall, and make your house smell absolutely amazing. They are for a snack, or put some peanut butter, or cream cheese on them for breakfast.

Pumpkin Almond Flour Mini Muffins

Recipe

Ingredients

  • 1/2 cup pumpkin purée (115g)

  • 1/3 cup sugar free syrup (115g)

  • 1 tbsp stevia

  • 2 eggs

  • 1 tsp vanilla

  • 2 cups almond flour

  • 1/2 cup protein powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 3 tsp pumpkin pie spice

  • 1/2 tbsp cinnamon

Steps

  1. Preheat oven to 325 degrees F.

  2. Whisk together pumpkin purée, eggs, vanilla, stevia and syrup.

  3. Stir in almond flour, protein powder, baking soda, salt, cinnamon, and pumpkin pie spice.

  4. Evenly divide batter into a greased mini muffin tray.

  5. Bake at 325 degrees for 15 minutes. For a regular size muffin tin, bake for 20-22 minutes
