Almond Flour Pumpkin Muffins

Fall is officially in full swing! Which calls for some Pumpkin muffins. These ones are delicious and moist, and made with almond flour.

Recipe

Ingredients

  • 2 cups almond flour

  • 1/2 cup protein powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 3 tsp pumpkin pie spice

  • 1/2 tbsp cinnamon

  • 1/2 cup pumpkin purée

  • 1/3 cup sugar free syrup

  • 1 tbsp stevia

  • 2 eggs

  • 1 tsp vanilla

Steps

  1. Preheat oven to 325 degrees F.

  2. Whisk together pumpkin purée, eggs, vanilla, stevia and syrup.

  3. Stir in almond flour, protein powder, baking soda, salt and spices.

  4. Evenly divide batter into a greased and lined muffin tray.

  5. Bake at 325 degrees for 20 minutes.
