These chocolate chip banana muffins are tasty, healthy and made with almond flour! It only requires ingredients you probably have around the house anyways. They make a great breakfast or snack when you’re on the go.

Recipe

Ingredients

  • 3 eggs

  • 3 large, very ripe bananas

  • 1 tsp vanilla extract

  • 1 tbsp cinnamon

  • 1 packet Splenda (optional)

  • 2 cups almond flour

  • 1/4 tsp salt

  • 1 tsp baking soda

  • 2/3 cup chocolate chips

Steps

  1. Finely mash the bananas, and whisk in the eggs, vanilla, cinnamon and Splenda.

  2. Fold in the almond flour, salt and baking soda.

  3. Pour batter into a greased and lined muffin tin, and top with chocolate chips.

  4. Bake at 350 degrees F for 25 minutes.

  5. Let cool for 15 in the pan, before transferring to a cooking rack.
