Peanut Butter Protein Cookies

These peanut butter protein COOKIES definitely satisfy a sweet tooth, while still being a filling snack thanks to the extra protein powder. No flour or sugar needed!

Peanut Butter Protein Cookies

Recipe

Ingredients

  • 2 scoops of protein powder (60 g)

  • 1/3 cup almond flour (20 g)

  • 1/4 cup rolled oats (20 g)

  • 1 very ripe banana

  • 1/4 cup natural peanut butter (65 g)

  • 1 egg

  • 1 tsp vanilla

  • pinch of salt

  • 1/4 cup chocolate chips (optional, but yummy)

Steps

  1. Mash the banana in a bowl, and stir in peanut butter, an egg and vanilla.

  2. Add the protein powder, almond flour, rolled oats, and salt to the bowl.

  3. Fold in the chocolate chips.

  4. On a baking sheet lined with parchment paper, scoop ~1.5 tbsp of dough for each cookie (the dough will be quite sticky).

  5. Bake at 325 degrees F for 8-10 minutes
