Homemade Nutrigrain Bars
I have always loved nutrigrain bars, so I am very excited to share this recipe for homemade apple cinnamon Nutrigrain bars—although some of them turned out looking more like pop tarts. I used an apple filling, but this could easily be substituted for your favourite jam or apple butter! These are so tasty, and could be eaten for breakfast, snack or even dessert.
Homemade Nutrigrain Bars
With apple cinnamon filling

Dough
1.5 cups almond flour
4 tbsp flaxmeal
2/3 cup cornstarch (or substitute arrowroot powder)
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/4 cup melted coconut oil
1 tsp vanilla
2 tbsp maple syrup
2 tbsp milk (can use plant based milk)
1/4 cup coconut flour
Filling
2 small apples, diced finely
1 tbsp fresh lemon juice
1 tsp cinnamon
1 tbsp brown sugar or maple syrup
Steps
Stir together the almond flour, flax meal, cornstarch, cinnamon, baking powder and salt.
Whisk together the wet ingredients for the dough (oil, vanilla, maple syrup and milk) and pour it into the dry ingredients.
Stir until combined. If the dough is too wet, add the coconut flour a tablespoon at a time until it reaches a dough like consistency.
Wrap the dough in saran wrap, and refrigerate for 1 hour.
To make the filling, combine all filling ingredients, and mix together until the sugar is dissolved.
To assemble the bars, roll the dough out between sheets of parchment until it is 1/4 cm thick.
Cut the dough into rectangles. On half of the rectangles, put ~2 tbsp of apple filling (depending how large you cut them). Cover with the remaining rectangles, and press the sides together to seal.
Place onto a parchment lined baking sheet, and bake for 10 minutes at 350 degrees F
