Flourless Zucchini Brownies

I can confirm that you can feed these healthified flourless brownies to unsuspecting coworkers, and they will never know there is zucchini in them. The zucchini keeps them moist and delicious, and also lets you pretend you’re eating vegetables instead of a brownie.

Recipe

Ingredients

  • 1 medium peeled zucchini, shredded

  • 1/2 cup natural peanut butter (125g)

  • 1/4 cup cocoa powder (25g)

  • 1.5 oz baking chocolate, chopped (I used unsweetened)

  • 1/4 sugar free syrup (1/4 cup)

  • 1 egg

  • 1 ripe banana

  • 1/2 tsp espresso powder (optional)

  • 1 tsp vanilla

  • 1/2 tsp baking soda

  • 1/2 cup chocolate chips

Steps

  1. Microwave the peanut butter for 1-2 min at 30 second intervals. Then add the chopped baking chocolate, and stir until melted.

  2. In a separate bowl, mash the banana, then mix in the egg, vanilla, syrup, baking soda, cocoa powder, and espresso powder.

  3. Fold the peanut butter mixture into the banana mixture.

  4. Squeeze the zucchini in a kitchen towel to release excess moisture, then stir the zucchini into the batter.

  5. Lastly, fold in chocolate chips if desired.

  6. Pour into a greased and lined 9x9 brownie pan, and bake at 350 degrees F for 20-30 minutes.
