Peanut Butter Chia Seed Bars
These Peanut Butter Chia Seed bars are a great alternative to traditional granola bars! They are super tasty and keep you full until your next meal. If you are looking for something low carb, or just want to mix it up, these are a delicious and easy to make option. You can also substitute any nut or sunflower butter for peanut butter to suite your preferences.
Peanut Butter Chia Seed Bars

Ingredients
1/2 cup natural peanut butter
1/2 cup coconut oil
splash of vanilla
1/2 cup protein powder
1 cup almond flour
1/2 cup ground chia seeds
2 tbsp stevia (or other sweetener)
1 oz dark chocolate + 1/2 tsp coconut oil
Steps
Melt the peanut butter and coconut oil and whisk together.
Stir in vanilla, chia seeds, sweetener, protein powder, almond flour
Pour into a rectangular container lined with parchment paper. Let cool in the fridge for at LEAST 1 hour, or overnight.
Melt together the dark chocolate and coconut oil.
Take the container out of the fridge, cut into bars, and drizzle the chocolate mixture on top.
Store in the fridge or freezer.
