Banana Bread Granola

This banana bread granola is SO tasty, and oil free too! This recipe probably forms the best clusters of any granola I’ve made. Its amazing in yogurt or smoothies, but honestly I also just eat it with milk, like cereal.

Recipe

Ingredients

  • 1 ripe banana

  • 2 tbsp tahini (can substitute for any nut butter)

  • 2 tbsp sugar free syrup

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1.5 cups oats

  • 1/2 cup chopped pecans and walnuts

Steps

  1. Mash the banana in a bowl, and add the tahini and syrup (if tahini is too thick, microwave for 10 seconds), and whisk together.

  2. Stir in the cinnamon and salt.

  3. Mix the oats and nuts into the wet mixture until well coated.

  4. Spread in a single layer in a baking sheet, and bake at 325 for 20 minutes. Remove from the oven and break up the granola into smaller chunks.

  5. Return to the oven for 20 more minutes, stirring the pieces halfway through (i.e. 10 minutes in).

  6. Let cool, and store in an air tight container.
