Burrito Bowl
This yummy Tex-Mex inspired bowl I had for dinner satisfies all my burrito cravings. I love the versatility of a burrito bowl. You can add whatever toppings you prefer, or happen to have on hand.

Yield: 1 burrito bowl
Ingredients
1 cup mixed greens
1/3 cup black beans
1/2 can green chilis
1/3 cup slow cooked pork
1/3 cup baked plantains
1/4 cup pico de gallo
1/4 cup mango salsa
2 tbsp guacamole
Steps
To make the black beans, cook the beans in a small skillet over medium heat. Add the green chilis, and season with salt and pepper.
Top your greens with the black beans, and remaining ingredients.
