Homemade Twix Bars

Okay these beauties are my take on a healthier version of TWIX bars inspired by @rachaelsgoodeats . The shortbread layer is almond and coconut flour, and the caramel is made from dates. These ones were so tasty, without any processed sugar.

Recipe

Ingredients

Shortbread

  • 1/2 cup almond flour

  • 1/2 cup coconut flour

  • 3 tbsp sugar free syrup

  • 1/3 cup coconut oil


Date Caramel

  • 2 cups dates, soaked in hot water


Chocolate layer

  • 3 oz dark chocolate

  • 1 tsp coconut oil

Steps

  1. Combine shortbread ingredients in a bowl, and mix until it forms a crumbly dough.

  2. Press the dough into a lined loaf pan. Bake at 350 degrees F for 12-15 minutes.

  3. Combine the dates in a food processor, and add a tablespoon of the soaking water as needed. Scrape down the sides and continue to blend until a smooth consistency.

  4. Microwave the chocolate and coconut oil for 30 seconds at a time and stir until smoothly melted.

  5. When the shortbread cools, assemble the layers. Smooth the caramel in an even layer, and refrigerate for 20 minutes.

  6. Top with the melted chocolate, and refrigerate for an hour.

  7. Chop into bars with a hot knife.
