Healthy Peach Cobbler

Is there anything better than fresh PEACH COBBLER ? This recipe is super easy, and has no added sugar or flour, yet still satisfies a sweet tooth. You could also customize this with whatever fresh fruit is in season. If you are feeding a crowd, try doubling the recipe and baking in a 9x13 pan.

Recipe

Ingredients

Topping

  • 3/4 rolled oats

  • 1/2 cup almond flour

  • 1 tsp cinnamon

  • pinch salt

  • 2 tbsp sugar free syrup

  • 2 tbsp melted butter (or coconut oil)

Filling

  • 3 cups fresh peaches, diced (~4 medium peaches)

  • 1/2 tsp cinnamon

  • 1 tsp lemon zest

  • 2 tsp lemon juice

  • 1.5 tsp cornstarch

Steps

  1. Stir together all filling ingredients, and set to the side.

  2. For the topping, stir together oats, almond flour, cinnamon, and salt. Then mix in syrup and melted butter, and stir until it forms a thick paste like mixture.

  3. Pour the filling into a greased pan (either an 8 inch round, or 8x8 square pan).

  4. Dollop spoonfuls of the topping on top of the filling, and spread evenly with a spatula.

  5. Bake at 350 degrees F for 30-35 minutes, or until golden brown on top.

  6. Allow to cool for at least 30 minutes, so that the juices have time to thicken.

  7. Top with greek yogurt and maple syrup if desired.
