Chocolate Chip Cookies
Recipe
Ingredients
1 cup softened butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp vanilla extract
3 cups all purpose flour
1 tsp baking soda (+2 tsp hot water)
1/4 tsp salt
1.5 cups semi sweet chocolate chips
Steps
Cream together the butter and sugars until well blended (either with a hand mixer or whisk). TIP: to soften butter without melting it, microwave it for 30 seconds at a time on 30% power.
Mix in the eggs one at a time, then the vanilla.
Mix in the baking powder and water flurry.
Stir in flour and salt, being careful not to over mix.
Fold in chocolate chips.
Form the dough into balls with 1 heaped tablespoon of dough each.
Refrigerate the dough for 1 hour, or overnight. Or freeze the dough for later.
Bake the cookie dough balls on a parchment (or silicone) lined baking sheet at 350 degrees F for 10-11 minutes. Don’t over bake as the cookies will continue to cook once removed from the oven.
