Apple Pie Baked Oatmeal
Okay, don’t come for me, but.... I don’t like oatmeal. I have just never enjoyed the texture. However, I love the option of have oats for breakfast. So behold: the OATMEAL BAKE. An oatmeal bake is a great way to have a nutritious and filling breakfast that you can prepare ahead of time. Serve it warm, topped with yogurt and fresh berries. You can customize whatever add ins and toppings you prefer, like cinnamon apple with toasted pecans, or blueberry!

Topped with Apples and Pecans
Recipe
Ingredients
Dry
2 cups rolled oats
1 tbsp ground flax
1 tsp baking powder
1 scoop protein powder
1/2 tsp salt
2 tsp cinnamon
Wet
1 ripe banana, mashed (or substitute for 1/3 cup unsweetened apple sauce)
1/2 cup egg whites
1+3/4 cup milk (any type)
1/3 tsp vanilla
3 tbsp sugar free syrup (optional, could substitute with stevia)
Toppings
2 small gala apples, chopped
1/2 tsp cinnamon
1/3 cup toasted chopped pecans
Steps
Preheat oven to 375 degrees F.
Stir together dry ingredients.
In a separate bowl, whisk together wet ingredients (except for the syrup), then combine the wet and dry mixtures.
Pour mixture into a greased 9x13 glass baking dish.
In a separate bowl, mix cinnamon into the apples and pecans (or other desired toppings). To toast the pecans, spread them in a single layer on a baking sheet and toast in the oven for 5 minutes.
Spread the toppings over the baking dish.
Bake for 30 minutes at 375 degrees. When the oatmeal is removed from the oven, brush the sugar free syrup overtop while it is still warm.

Just substitute the toppings for 1 cup of fresh or frozen blueberries
