Pumpkin Oat Waffles

These pumpkin oat waffles were absolutely DELICIOUS. The recipe is similar to my banana oat waffles, except I substituted the mashed banana for pumpkin purée. If you have a half full can of purée left over from making various fall treats, this is a perfect recipe to use it up!

Pumpkin Oat Waffles

Recipe

Yield: 2 Waffles

Ingredients

  • 1 cup oats

  • 1/3 cup pumpkin purée

  • 1/2 scoop protein powder

  • 1 egg

  • splash of vanilla

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 2 tbsp Greek yogurt

  • 1/2 cup milk of choice

  • 1 tbsp flax meal (optional)

Steps

  1. Blend the oats into a flour. You can do this using a regular blender or food processor.

  2. Mix all the ingredients in the blender until well combined.

  3. Cook in a greased waffle maker on HIGH heat for about 4 minutes. If your waffle is falling apart, try turning the heat up.

  4. Enjoy with your favourite toppings.
